Quinoa Salad

Here’s a quick, protein-rich hot salad that can be eaten on its own or used as a stuffing or side dish. You can add chopped-up kale or other vegetables into the mix and serve it with leafy greens.

  • 100 g quinoa
  • 100 g frozen peas
  • 1 can chick peas


  • veggie stock
  • chilli powder
  • pepper
  • paprika
  • 0.5-1 tsp turmeric
  • basil


  1. Rinse quinoa, and place in the appropriate amount of boiling water (roughly twice as much water as quinoa).
  2. Add veggie stock and chilli powder.
  3. Let simmer for 15 minutes with the saucepan's lid on.
  4. Add the rest of the ingredients - including spices to taste - and mix well.
